"Spaghetti" Casserole
A healthier alternative to a traditional baked spaghetti.

  1. Preheat oven to 350 degrees.
  2. Cook ground beef (or turkey), onion powder, Italian seasoning, and any other desired seasonings until browned. Add spaghetti sauce.
  3. Mix squash, yogurt, and meatsuace and add to an 8x8 pan or equivalent casserole dish. Top with Mozzarella cheese, and then sprinkle Parmesan evenly over the top.
  4. Bake until cheese is slightly browned and bubbly- approximately 20 minutes.
Recipe Notes

To cook the spaghetti squash, cut in half "hamburger style" which will create longer strands of "spaghetti". Scoop out seeds and rub insides with oil. Sprinkle with garlic powder and Italian seasonings. Place on a baking sheet cut side up and bake for 30-45 minutes or until squash is tender. Drain any liquid, and using a fork, scoop out "spaghetti" strands. Discard skin and enjoy your "spaghetti"!
